This Chef’s name is “Uncle Ray”. He is making Boudain (BU-DAN) - this is a form of sausage that is very popular in Louisiana - it is stuffed with pork liver, rice, and God-knows-what-else!

Ahah boudin (yeah cause the right spelling is “boudin” and not “boudain”) is very French, you don’t wanna know what’s in it. I saw once how they make it in real, I already disliked it but after that, totally sick of it. Do you like that ?

But Uncle Ray spells it Boudain - that is why I took the picture in the first place - Blacks from the south mis-spell a lot of shit that they write with a magic-marker on a sign.
Yeah or maybe it’s now the way to write it in Louisiana. Like a lot of foreign words, we change the spelling and think it’s the right, we have the same here in France with some english word, or German with some French ones.

no - it is spelled Boudin - another word that gets mis-spelled a lot is muffeletta - restaurants spell it muffelata because that is how it sounds. In case you are wondering, a muffeletta is a round sandwich with olives, provolone cheese, ham, genoa salami, and some other shit that I can’t think of right now - very tasty, very salty…hey, isn’t this the photography topic?
