Again, you don’t explain what’s wrong with Coppola. Except that now, plus the fact that he’s italian-american and not 100% american, you mention his weight. Sorry, I have way more admiration for him than Stone.
And about Stone, then again, being a veteran doesn’t mean anything. You can be a veteran and never been on the battlefield, or never killed anyone and that changes everything. I don’t know Stone enough to know his degree of experience and contribution in the war. But it doesn’t mean anything to me. We’re talking about art, movies, not about truth or documentary.
Anyway, back on the topic, since you can’t explain you don’t like Coppola style (and not Coppola’s body), I’ll tell you what.

Why isn't it about the war ? As it's often said, there's not one point of view, one war. Being about the war, does it necessarely mean there has to be dirty men hidding in the woods ? And viets hidden under the floor ? And training session ? Platoon was the same as the traditional war movies, maybe it's better, but the scenes, the themes are the same. Apocalypse Now is very different and that's why you didn't like it. First of all, there's barely an army. There's barely extraordinary fights. And you probably didn't like the fact that it's mainly psychologicak. Even if you can't explain your point.
